Delicious cookies with a crispy outer layer and chewy center, filled with vibrant confetti sprinkles, perfect for any occasion.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/4 cup (50 g) packed light brown sugar
  • 3/4 tsp kosher salt
  • 1 1/2 cups (300 g) granulated sugar, divided
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 2 1/2 cups (300 g) all-purpose flour
  • 1/2 cup plus 2 Tbsp holiday sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, beat the softened butter, light brown sugar, kosher salt, and 1 1/4 cups (250 g) granulated sugar until creamy.
  3. Add the room-temperature egg, egg yolk, and vanilla extract; beat until combined.
  4. Add in the baking soda and mix until incorporated.
  5. Gradually add the flour and mix until just a few streaks of flour are visible.
  6. Gently fold in the holiday sprinkles.
  7. Roll the dough into balls and optionally coat them with granulated sugar.
  8. Arrange on a baking sheet and bake for 7 minutes; bang the pan on the counter, rotate, and bake for an additional 2 minutes until golden brown.
  9. Cool on a wire rack and serve warm.

Notes

For a dairy-free option, use coconut oil instead of butter. Keep an eye on baking time to avoid overbaking.
