A creamy sweet potato casserole topped with fluffy marshmallows, perfect for holidays or family gatherings.

  • 4 medium sweet potatoes (about 2 lbs)
  • 1/4 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/2 cup whole milk
  • 1 cup chopped pecans
  • 2 cups mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil peeled and chopped sweet potatoes in water until fork-tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a pot; mix in butter, brown sugar, and milk until smooth.
  4. Stir in half of the chopped pecans.
  5. Transfer the mixture to a greased baking dish, top with mini marshmallows and remaining pecans.
  6. Bake for 25-30 minutes until marshmallows are golden brown.
