Ingredients

Scale
  • 3/4 cup whole milk, heated to 110 degrees
  • 1 1/4 ounce packet active dry yeast (2 1/4 tsp)
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 2 3/4 cups all-purpose flour
  • 3 Tbsp. unsalted butter, room temperature
  • 1/2 tsp. kosher salt
  • Cooking spray
  • 1 cup packed dark brown sugar
  • 6 Tbsp. unsalted butter, melted
  • 1 Tbsp. ground cinnamon
  • 1 tsp. ground allspice
  • 1/2 tsp. kosher salt
  • All-purpose flour, for dusting
  • 2 Honeycrisp or Granny Smith apples, peeled, cored, finely chopped
  • 2/3 cup all-purpose flour (for streusel topping)
  • 1/4 cup packed dark brown sugar (for streusel topping)
  • 3 Tbsp. granulated sugar (for streusel topping)
  • 1/4 tsp. ground cinnamon (for streusel topping)
  • 1/4 tsp. kosher salt (for streusel topping)
  • 3 Tbsp. unsalted butter, melted (for streusel topping)
  • 1 cup confectioners’ sugar (for glaze)
  • 6 ounces cream cheese, softened (for glaze)
  • 1/4 cup whole milk (for glaze)
  • 2 tsp. unsalted butter (for glaze)
  • 1 tsp. pure vanilla extract (for glaze)

Instructions

  1. Pour the warm milk into a large bowl, then add the yeast and sugar. Let it sit until foamy, about 5-10 minutes.
  2. With a whisk, add the egg, flour, softened butter, and salt. Stir until a soft dough forms.
  3. Transfer the dough to a greased bowl, cover with a kitchen towel, and let it rise in a warm place until doubled, about 1 hour.
  4. In a small bowl, mix filling ingredients: dark brown sugar, melted butter, ground cinnamon, allspice, and salt until combined.
  5. Once the dough has risen, punch it down gently. Roll into a rectangle on a floured surface. Spread the filling mixture evenly, then sprinkle on finely chopped apples.
  6. Roll the dough tightly into a log, slice into bite-sized pieces, and arrange on a greased sheet pan. Cover and let rise again for about 30 minutes.
  7. Preheat your oven to 350°F. While waiting, mix the ingredients for the streusel topping and sprinkle it over the rolls.
  8. Bake for about 15-20 minutes until golden brown and fragrant.
  9. While the rolls are baking, whisk together the glaze ingredients until smooth. Once the rolls have cooled slightly, drizzle the warm glaze over them.
