Delightful Italian Christmas cookies that are soft, melt-in-your-mouth treats drizzled with sweet icing and colorful sprinkles, perfect for holiday celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1/4 cup (1/2 stick) butter, softened
  • 1 cup granulated sugar
  • 8 oz. ricotta
  • 1 tsp. pure vanilla extract
  • 1/2 tsp. almond extract (optional)
  • 1 egg
  • 1 cup powdered sugar
  • 2 Tbsp. whole milk
  • 1/4 tsp. almond extract (optional for icing)
  • Sprinkles

Instructions

  1. Preheat your oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the butter and granulated sugar together on medium speed until light and fluffy.
  4. Add the ricotta, vanilla extract, almond extract (if using), and egg; mix until smooth.
  5. Slowly fold in the dry ingredients until just combined.
  6. Portion out the dough into approximately 1 ½ tablespoon-sized balls and place them on the baking sheets.
  7. Bake for about 15 minutes until the tops remain pale, and the bottoms are golden brown.
  8. Cool the cookies on a wire rack.
  9. For the icing, whisk together powdered sugar and whole milk until smooth; add almond extract if desired.
  10. Spoon icing over cooled cookies and add sprinkles before it sets.

Notes

These cookies can be stored in an airtight container for about a week or frozen for up to three months.
