Delightfully spiced gingerbread cookies that evoke nostalgia and joy, perfect for any holiday celebration.

Ingredients

  • 3/4 cup (1 1/2 sticks) butter, softened
  • 3/4 cup packed brown sugar
  • 2/3 cup molasses
  • 1 large egg
  • 1 tsp. pure vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1 Tbsp. ground ginger
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. ground nutmeg
  • 1/2 tsp. kosher salt
  • 2-inch piece fresh ginger, grated (optional)
  • Zest of 1 orange (optional)
  • 1/2 tsp. finely ground black pepper (optional)
  • Sugar cookie icing, for decorating
  • Sprinkles, for decorating

Instructions

  1. In a large bowl, beat the softened butter, packed brown sugar, and molasses until fluffy, about 2 minutes.
  2. Add the egg and vanilla extract, beating until thoroughly combined.
  3. In a separate bowl, whisk together the flour, ground ginger, baking soda, ground cinnamon, ground cloves, ground nutmeg, and kosher salt.
  4. Gradually add the dry ingredients to the wet ingredients while mixing on low.
  5. If desired, incorporate fresh ginger, orange zest, or black pepper at this stage.
  6. Divide the dough into two discs, wrap in plastic wrap and chill for 2 to 3 hours.
  7. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Roll out one disc of dough until 1/4 inch thick and cut out shapes, placing them on prepared baking sheets.
  9. Bake for 9 to 10 minutes, until cookies are slightly puffed and set.
  10. Cool for 5 minutes on the baking sheet before transferring to a cooling rack, then decorate with icing and sprinkles as desired.

Notes

Chilling the dough enhances flavor and texture. Decorate as desired for a festive touch.
