Soft, chewy cookies filled with a luscious creamy filling, reminiscent of childhood memories.

Ingredients

  • 1/2 cup raisins
  • 1 1/2 cups quick-cooking oats
  • 1 cup dark brown sugar
  • 1/4 cup granulated sugar
  • 1 Tbsp molasses
  • 1/2 tsp kosher salt
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1 3/4 cups all-purpose flour
  • 1/2 cup vegetable shortening or unsalted butter
  • 1/4 tsp kosher salt (for filling)
  • 1 1/3 cups confectioners’ sugar
  • 2 Tbsp Marshmallow Fluff

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Soak the raisins in hot water until soft, then drain them thoroughly.
  3. Pulse the oats in a food processor until broken down to add texture.
  4. In a large bowl, mix dark brown sugar, granulated sugar, molasses, salt, and softened raisins until smooth, then blend in softened butter.
  5. Add the egg, egg yolk, vanilla extract, baking soda, and cinnamon, mixing until combined.
  6. Gradually fold in flour and oats to create a cohesive dough.
  7. Scoop dough into balls and place on parchment-lined baking sheets.
  8. Bake for 10-12 minutes until edges are set and centers remain soft.
  9. Cool cookies on a wire rack.
  10. For the filling, blend shortening and salt until smooth; then add confectioners’ sugar and Marshmallow Fluff, mixing until fluffy.
  11. Assemble cookies by spreading filling on the flat side of one and topping it with another cookie.

Notes

For a healthier option, consider using whole wheat flour and replacing some butter with applesauce.
