  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another bowl, beat the softened butter, granulated sugar, and brown sugar until fluffy.
  4. Add the egg and vanilla extract; mix until smooth.
  5. Gradually combine the dry ingredients with the wet mixture until just mixed.
  6. In a separate bowl, blend the cream cheese and powdered sugar until creamy.
  7. Scoop tablespoon-sized portions of dough onto the baking sheets, make an indentation in each scoop, fill with the cream cheese mixture, then seal with more dough.
  8. Bake for 10-12 minutes until the edges are set but the centers remain soft.
  9. Let cool slightly before serving.
