A nostalgic dessert combining rich cheesecake, spiced apples, and a crunchy oat topping, served in delightful mini cheesecakes.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • â…“ cup granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 2 large eggs
  • 3 cups fresh apples (Granny Smith or Honeycrisp), peeled and sliced
  • 1 tsp cinnamon
  • â…“ cup brown sugar
  • ½ cup rolled oats

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press this mixture into the bottom of springform pans or muffin tins.
  3. Beat the softened cream cheese until smooth, then blend in sour cream, eggs, and sugar until silky.
  4. Toss the sliced apples with brown sugar and cinnamon.
  5. Layer the cheesecake filling over the crusts, top with spiced apple slices, and sprinkle rolled oats over the top.
  6. Bake for 25-30 minutes until golden brown and center is slightly jiggly. Allow to cool completely before serving.

Notes

Avoid overbaking to maintain a creamy texture. Store in an airtight container in the fridge for up to 5 days.
